Indulge in irresistibly creamy Roasted Garlic Mashed Potatoes, where oven-roasted garlic enhances the flavor of mellow potatoes. Pair with rosemary for a fluffy and flavorful side dish.
Ingredients:
  • 6 medium russet potatoes (about 2 lb)
  • 6 unpeeled garlic cloves
  • 2 tablespoons olive or vegetable oil
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried rosemary leaves
  • 1/2 teaspoon salt
  • 1/3 to 1/2 cup milk
Instructions:
  • Preheat oven to 375°F. Scrub potatoes and pierce them with a fork to release steam. Wrap garlic cloves in foil. Bake until potatoes are soft, about 1 hour.
  • In a small skillet, warm up oil and rosemary over medium heat for 2 to 3 minutes, stirring occasionally, until the rosemary becomes fragrant.
  • Halve the potatoes, then gently transfer the insides to a large bowl, leaving the skins behind. Peel the garlic cloves and discard the skins. Combine the garlic, oil, and salt with the potatoes. Mash until creamy, adding milk as needed for the desired texture.
