Creamy roasted garlic mashed potatoes - a versatile, flavorful side dish perfect for pairing with any main course.
Ingredients:
  • 1 medium head garlic, top of bulbs trimmed off so tops of cloves are exposed
  • 1 tablespoon olive oil
  • 2 pounds russet potatoes, peeled and quartered
  • 4 tablespoons butter, softened
  • 0.5 cup milk
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Drizzle the garlic head with oil and wrap it in aluminum foil.
  • Roast in the oven that's all warmed up for 60 minutes.
  • After roasting the garlic for approximately 35 minutes, boil a large pot of salted water. Cook potatoes until tender, around 15 minutes. Drain and allow to cool briefly.
  • Begin by dicing the potatoes and transferring them into a large mixing bowl. Then, incorporate the milk, butter, salt, and pepper to create a rich and flavorful base for your dish.
  • Once roasted, extract the garlic from the oven, halve the head, and gently press out the softened cloves into the mixing bowl. Blend with an electric mixer until thoroughly mixed and reached desired texture.
