Create rich pork gravy using drippings and stock, pour over seasoned roasted pork loin slices for a delicious meal.
Ingredients:
  • 1 (3 pound) boneless pork loin roast
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon dry mustard powder
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 1 stalk celery, diced
  • 3 tablespoons flour
  • 0.5 cup pork stock
Instructions:
  • Prepare all your wonderful ingredients.
  • Preheat the oven to 300 degrees F (150 degrees C), then gently score the top of the pork roast and transfer it to a roasting pan.
  • In a skillet over medium heat, melt butter. Stir in garlic, oregano, cayenne, thyme, mustard powder, and black pepper until fragrant, about 1 minute. Take off the heat.
  • Coat pork generously with spice mixture, making sure to massage it into the cuts. Surround the pork with onion, carrots, and celery; then season everything with salt and pepper.
  • Roast in the preheated oven for 1 hour 45 minutes. Then, increase the heat to 425 degrees F (220 degrees C) and continue cooking for about 15 minutes until the pork is nicely browned and reaches an internal temperature of at least 150 degrees F (65 degrees C).
  • Take out of the oven and allow to rest for 10 minutes. Verify the temperature; it should read at least 160°F (75°C) before cutting.
  • Once the pork has finished resting, transfer the roasting pan with vegetables and pan drippings to a stove burner set to medium heat. Whisk in flour and simmer for about 3 minutes to eliminate the raw taste. Gradually whisk in the stock until the gravy thickens to your liking.
  • Strain the dish and enjoy with pork.
