Roasted Potato-Garlic Dip

Creamy roasted potato dip made with sour cream, chicken bouillon, and garlic, ready in 30 minutes. Perfect for dipping veggies.
Ingredients:
  • 1 bag (19 oz) frozen roasted potatoes with garlic & herb sauce
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 teaspoon chicken bouillon granules
  • 1 clove garlic, finely chopped
  • 2 tablespoons chopped fresh parsley
  • Assorted cut-up fresh vegetables
Instructions:
  • Prepare the potatoes according to the instructions on the packaging. Transfer the cooked potatoes to a medium bowl and allow them to cool slightly for 10 to 15 minutes.
  • In a separate medium bowl, use an electric mixer on medium speed to blend the cream cheese until smooth. Then add the sour cream, bouillon, and garlic, and continue beating until well combined and smooth.
  • Mash potatoes until slightly smooth, then add to sour cream mixture and beat on medium speed until well combined. Gently fold in parsley. Serve with assorted vegetables. Refrigerate dip and let it sit at room temperature for 15 minutes before serving.
