Elevate your smashed potatoes with Chef John's garlic herb butter drizzle technique.
Ingredients:
  • 3.5 pounds medium yellow potatoes, washed
  • 0.33333334326744 cup kosher salt
  • 1 pinch cayenne pepper, or to taste
  • 0.5 cup unsalted butter
  • 4 cloves garlic, thickly sliced
  • 4 sprigs fresh rosemary, or to taste
  • 4 sprigs fresh thyme, or to taste
Instructions:
  • In a 5-quart stockpot, submerge potatoes in 3 quarts of cold water, add kosher salt, and bring to a gentle simmer over high heat. Cook until potatoes are tender, about 15 to 20 minutes. Drain well and let potatoes cool until safe to handle.
  • Place the potatoes on a sheet pan to cool to room temperature. Make 4 or 5 shallow cuts down the sides of each potato, about every inch, ensuring the skin splits evenly when smashed. Refrigerate until fully chilled and ready to smash, ideally for 8 hours to overnight.
  • In a small pan over medium heat, let the butter, sliced garlic, rosemary, and thyme mingle until the butter melts, bubbles, and the garlic softens and turns translucent, about 3 to 5 minutes. Take it off the heat.
  • Preheat the oven to 450 degrees F (232 degrees C). Line 2 metal baking sheets with Silpat® silicone baking mats and brush with infused melted butter generously.
  • Take the potatoes out of the fridge and gently smash each between two pieces of plastic using a flat, heavy object until they are 1/2 to 3/4-inch thick. Season with salt, pepper, and cayenne on both sides, being careful not to crumble the potatoes. Arrange them on a sheet pan without overlapping. Drizzle and brush a generous amount of melted butter on top.
  • Bake potatoes in the preheated oven for 35-45 minutes until golden brown and crispy at the edges.
  • Return the pan with the leftover garlic and herb butter to medium-low heat. Stir and cook until the garlic begins to lightly brown, about 3 to 4 minutes. Take it off the heat and set aside for later use.
  • Transfer potatoes to a platter, layer on garlic slices, crumble toasted herbs over the top if desired, and serve promptly.
