Roasted sweet potato, wilted garlic kale, poached egg and almonds

Create a cafe-worthy, healthy breakfast at home.
Ingredients:
  • 300g peeled sweet potato, cut into 1cm thick rounds
  • 4.60 gm extra virgin olive oil
  • 1 garlic clove, thinly sliced
  • 75g trimmed kale, coarsely chopped
  • 2 eggs, poached
  • 20.00 ml natural almonds, chopped
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line a baking tray with parchment paper. Place potatoes on the tray, then lightly coat with olive oil. Roast for 20-25 minutes until golden and tender.
  • In a large non-stick frying pan over medium-high heat, heat oil until shimmering. Add garlic and stir for 30 seconds until fragrant. Stir in kale just until wilted.
  • Distribute the potato evenly on serving plates. Add the wilted kale mixture and poached eggs on top. Finish by sprinkling with almonds.
