Indulgent rocky road fudge that's impossible to resist.
Ingredients:
  • 395g can sweetened condensed milk
  • 180.00 gm brown sugar
  • 55.60 gm glucose syrup
  • 125g butter, chopped
  • 200g milk chocolate, finely chopped
  • 375.00 ml mini marshmallows
  • 62.50 ml granulated nuts
  • 21.25 gm desiccated coconut
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper, ensuring there is a 2cm overhang on all sides.
  • In a saucepan, combine condensed milk, sugar, syrup, and butter over low heat. Stir constantly, ensuring the mixture does not boil, until glossy and sugar is dissolved, about 10 minutes.
  • Raise the heat to medium-low and bring the mixture to a gentle simmer while stirring. Keep stirring constantly for 6 to 8 minutes until the mixture thickens and pulls away from the side of the pan. Remove from heat and add chocolate, marshmallows, nuts, and half of the coconut. Mix until everything is combined and the chocolate is melted. Transfer the mixture into the prepared pan and smooth the top. Sprinkle the remaining coconut on top and press down gently with the back of a spoon to set it. Let it sit for 30 minutes, then cover with plastic wrap and refrigerate for 6 hours until it's firm.
  • Cut into bite-sized 2.5cm pieces for a delightful presentation. Serve and enjoy!
