Rocky Road S'mores Bars

Indulgent no-bake s'mores bars with layers of marshmallows, gooey chocolate, nuts, and crispy cereal.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 2/3 cup firmly packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup margarine or butter, softened
  • 1 teaspoon vanilla
  • 2 egg yolks
  • 3 cups miniature marshmallows
  • 1 cup milk chocolate chips
  • 2/3 cup light corn syrup
  • 1/4 cup margarine or butter
  • 2 teaspoons vanilla
  • 1 (11.5-oz.) pkg. (2 cups) milk chocolate chips
  • 2 cups Golden Grahams™ Cereal
  • 1 cup salted peanuts
Instructions:
  • Preheat the oven to 350°F. In a large bowl, mix together all base ingredients, excluding marshmallows and chocolate chips, until the mixture is crumbly. Press the mixture firmly into the bottom of an ungreased 13x9-inch pan.
  • Bake at 350°F until light golden brown, about 12 to 15 minutes.
  • Take out the partially baked base from the oven and quickly sprinkle with marshmallows and 1 cup of chocolate chips.
  • Place back in the oven until the marshmallows slightly puff up. Take out from the oven and let it cool as you make the topping.
  • In a large saucepan, melt margarine and chocolate chips over medium heat while stirring constantly for 2 to 3 minutes. Add in cereal and peanuts, then spoon warm topping over baked base, spreading gently to cover. Refrigerate for 1 hour until firm, then cut into bars.
