Infuse olive oil with garlic and rosemary, rub between skin and meat of poultry before roasting for ultimate flavor.
Ingredients:
  • 0.75 cup olive oil
  • 3 tablespoons minced garlic
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon ground black pepper
  • salt to taste
  • 1 (12 pound) whole turkey
Instructions:
  • Preheat your oven to 325°F (165°C) for the perfect cooking temperature.
  • Combine the olive oil, garlic, rosemary, basil, Italian seasoning, black pepper, and salt in a small bowl. Set it aside.
  • Prepare the turkey by thoroughly washing and patting it dry. Remove any large fat deposits and gently loosen the skin from the breast by carefully working your fingers underneath, all the way to the end of the drumstick, ensuring not to rip the skin.
  • Gently massage the rosemary mixture under the skin of the breast and down the thigh and leg. Rub the rest of the rosemary mixture on the outside of the breast and secure the skin over any exposed meat using toothpicks.
  • Place the turkey on a rack in a roasting pan and add 1/4 inch of water to the bottom. Roast in the oven until the bird reaches an internal temperature of 180 degrees F (80 degrees C), about 3 to 4 hours.
