Russian Mushroom Salad

Impress with a visually stunning Russian layered salad of mushrooms, eggs, pickles, onion, and mayonnaise.
Ingredients:
  • 2 potatoes
  • 4 cups chopped mushrooms
  • 4 hard-boiled eggs, peeled and diced
  • 2 red onions, finely chopped
  • 1 cup mayonnaise, or to taste
  • 1 cup finely chopped pickles
  • 1 cup finely chopped cornichons
Instructions:
  • Place unpeeled potatoes in a pot and cover with salted water. Bring it to a boil, then simmer on medium-low heat until tender, approximately 20 minutes. Drain, let cool, then peel and dice.
  • Heat butter in a large skillet over medium heat. Sauté mushrooms until browned, about 8 to 10 minutes. Set aside to cool.
  • Start by generously lining the base of a mold with 2 diced eggs. Next, arrange a layer of 1 onion, followed by 1/4 cup of mayonnaise, half of the mushrooms, and all the potatoes. Then, evenly spread over 1/4 cup of mayonnaise, all the cornichons, the rest of the eggs, and another 3 1/2 tablespoons of mayonnaise. Conclude the layers with the remaining onion, mushrooms, and a final dollop of mayonnaise.
  • Chill in the refrigerator until solid, for 1 to 2 hours. Then, flip onto a serving platter and remove the mold.
