Sage- and Oregano-Rubbed Turkey with Honey-Lemon Glaze

Honey lemon herb glazed roast turkey, perfectly golden-brown.
Ingredients:
  • 1 whole turkey (12 lb), thawed if frozen
  • 3 teaspoons dried rubbed sage
  • 3 teaspoons dried oregano leaves
  • 1 teaspoon pepper
  • 2 tablespoons olive or vegetable oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 tablespoon butter or margarine
Instructions:
  • Preheat the oven to 325°F while preparing the turkey. After removing the neck and giblets, rinse the turkey inside and out with cold water and pat it dry with paper towels. Secure the neck skin to the back of the turkey with a skewer and fold the wings across the back so the tips are touching. Place the prepared turkey, breast side up, in a shallow roasting pan on the lowest oven rack.
  • Combine sage, oregano, salt, pepper, and oil in a small bowl. Massage herb mixture onto the turkey, ensuring to reposition the drumsticks with a metal piece or tuck them under the skin. Secure the drumsticks by tying them with cotton string if preferred. Place an ovenproof meat thermometer into the thickest part of the inside thigh without touching the bone.
  • Roast uncovered for 1 hour. Once the turkey starts to become golden brown, cover it with a tent of heavy-duty foil and continue roasting for 2 hours and 15 minutes.
  • Warm the glaze ingredients in a 1-quart saucepan over low heat, stirring occasionally, until the honey and butter are melted.
  • Loosen skin or untie legs to ensure even cooking. Brush turkey with glaze. Roast for 10 minutes uncovered. Brush with glaze again and roast for an additional 10 to 20 minutes uncovered until thermometer reads 165°F and drumsticks are easily movable.
  • Transfer the turkey to a cozy platter and tent it with foil to lock in the warmth. Allow it to rest for 15 minutes to make carving a breeze.
