Salmon and broccoli linguine

Whip up a delicious salmon and broccoli linguine in just 17 minutes for a quick and satisfying dinner.
Ingredients:
  • 375g linguine
  • 350g broccoli, cut into small florets
  • 18.20 gm extra virgin olive oil
  • 6 green onions, thinly sliced
  • 2 garlic cloves, crushed
  • 2 tsp finely grated lemon rind
  • 300ml Cooking Cream
  • 415g can red salmon, skin and bones removed, flaked into large chunks (see notes)
  • 40.00 ml chopped fresh dill, plus extra to serve
Instructions:
  • Prepare pasta according to the package instructions. Add broccoli during the last 3 minutes of cooking. Drain pasta and broccoli, saving 1/3 cup of the cooking liquid.
  • In a large, deep frying pan over medium heat, heat oil until shimmering. Add onion, garlic, and lemon rind, and cook until fragrant, about 2 minutes. Pour in cream and lemon juice, stirring to combine. Bring to a simmer.
  • Combine the salmon, dill, reserved cooking liquid, and pasta mixture in a pan. Cook over low heat for 2 minutes until heated through and slightly thickened. Season with salt and pepper. Serve topped with extra dill.
