Garlic butter crusted salmon fillet - a delectable dinner delight!
Ingredients:
  • 40g butter, chilled, chopped
  • 2 small garlic cloves, crushed
  • 2 tsp finely chopped fresh chives
  • 2 tsp finely chopped fresh continental parsley leaves
  • 4 (about 180g each) skinless, boneless salmon fillets
  • 40g (1/4 cup) plain flour
  • 2 eggs, lightly whisked
  • 115g (1 1/4 cups) panko breadcrumbs
  • Vegetable oil, to shallow-fry
  • Lemon wedges, to serve
  • Salad leaves, to serve
Instructions:
  • Start by smashing the butter on a cutting board with a fork. Mix in the garlic, chives, and parsley until well combined. Shape the butter into a 6cm long and 3cm thick log, then wrap it in plastic wrap. Refrigerate for 2 hours until firm.
  • Carefully carve a 5cm long and 4cm deep pocket into the thickest part of each salmon fillet using a small knife, being mindful not to slice all the way through.
  • Slice the butter into 8 pieces. Place 2 slices into the pocket of each salmon fillet, then gently press to seal.
  • Prepare a breading station by setting up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge the salmon fillets in flour, then egg, and finally breadcrumbs, ensuring they are well-coated, especially on the cut side. Repeat for all fillets.
  • In a medium non-stick frying pan, generously pour oil to reach 5cm up the side. Sear salmon, starting with the top side, until golden brown, approximately 2 1/2 minutes. Flip and cook for another 2 1/2 minutes until golden. Quickly sear each side for 1 minute. Place on a paper towel-lined plate to drain.
  • Garnish the salmon with fresh lemon wedges and a side of crisp salad.
