French-style meuniere salmon with a rich lemon butter sauce is a delightful twist on a classic dish.
Ingredients:
  • 4 (4 ounce) center-cut salmon fillets, with skin
  • salt and ground black pepper to taste
  • 0.25 cup all-purpose flour
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon minced fresh parsley
Instructions:
  • Preheat the oven to a toasty 200 degrees Fahrenheit (95 degrees Celsius).
  • Season the salmon with a touch of salt and pepper. Coat the salmon pieces in flour by gently pressing them in, ensuring to remove any extra flour.
  • In a skillet over medium-high heat, melt butter with oil. Add salmon, flesh-side down, and sear for 3 minutes. Carefully flip and cook for another 3 minutes. Transfer salmon to a warm oven-safe plate. Dab skillet with a paper towel to clean.
  • - Heat the skillet over medium-high heat. Melt butter for the sauce before whisking in lemon juice and zest. Cook and stir until warmed and slightly reduced, for about 1 to 2 minutes. Remove from heat and stir in parsley. Finally, drizzle the sauce over the salmon and serve.
