Maple soy marinade with wasabi paste and a splash of whiskey enhances cedar-planked salmon.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup maple syrup
  • 1.5 tablespoons rye whiskey
  • 2 teaspoons wasabi paste
  • 4 (8 ounce) salmon fillets
  • 4 untreated cedar planks
Instructions:
  • In a blender, combine soy sauce, maple syrup, rye whiskey, and wasabi paste until smooth. Transfer half of the mixture to a resealable plastic bag for marinating the salmon and refrigerate the rest for a tasty dipping sauce. Add the salmon to the bag, coat with the marinade, remove excess air, and seal. Refrigerate for 4 hours to marinate.
  • Soak cedar planks in water for a minimum of 2 hours until fully submerged.
  • Preheat a grill to medium-high heat. Take the salmon fillets out of the marinade and set each one on a soaked cedar plank. Dispose of the bag and marinade.
  • Grill the planked salmon with the cover closed until it easily flakes with a fork, approximately 10 minutes. Serve alongside the reserved dipping sauce.
