Zesty orange mayo elevates succulent salmon fillets.
Ingredients:
  • 85g (1/3 cup) whole-egg mayonnaise
  • 42.00 gm fresh orange juice
  • 40.00 ml finely chopped chives
  • 2 tsp finely shredded orange rind
  • Pinch of salt
  • 4 (about 180g each, 2cm thick) salmon steaks, skin on
  • 6 (about 500g) kipfler potatoes, scrubbed, thickly sliced
  • 2 bunches asparagus, ends trimmed
Instructions:
  • Whisk together mayonnaise, fresh orange juice, chopped chives, minced garlic, and grated orange zest in a pitcher. Taste and add salt to season. Let it sit for flavors to meld.
  • 1. In a glass dish, lay the salmon and generously drizzle it with 1 tablespoon of oil. Season with salt. 2. In a separate bowl, place the potatoes and drizzle them with half of the remaining oil. Season with salt. 3. Heat the rest of the oil in a large non-stick frying pan over medium-high heat. Cook the potatoes for 4 minutes on each side until tender. Transfer them to a plate.
  • Sear salmon with asparagus in a pan for 2 minutes per side until salmon reaches desired doneness and asparagus is vibrant green and tender-crisp.
  • Place potato, asparagus, and salmon on plates, then generously drizzle with dressing before serving.
