San choy bau skewers

Summer grilling reigns with these pork skewers inspired by san choy bau.
Ingredients:
  • 500g pork mince
  • 187.50 ml panko breadcrumbs
  • 2cm piece fresh ginger, finely grated
  • 100.65 gm oyster sauce
  • 1 1/2 tsp sesame oil
  • 65.63 gm soy sauce
  • 4 green onions, finely chopped
  • 450g packet microwave jasmine rice
  • 150g snow peas, trimmed, sliced
  • 2 baby cos lettuce, leaves separated
  • 1/2 x 227g can water chestnut slices, finely chopped
  • Fresh coriander sprigs, to serve
  • Sliced long red chilli, to serve
Instructions:
  • Combine mince, breadcrumbs, garlic, ginger, half of the oyster sauce, 1 teaspoon oil, soy sauce, and half of the onion in a large bowl. Season with salt and pepper. Mix thoroughly and shape into 8 sausages, each 12cm long. Thread onto skewers.
  • Preheat a greased barbecue grill over medium heat and cook skewers, turning occasionally, for about 10 minutes until they are nicely browned and cooked through.
  • While rice is heating following packet instructions, pour boiling water over snow peas in a heatproof bowl. Let stand for 2 minutes, then drain. Toss together the rice, snow peas, and remaining onion in a mixing bowl.
  • Mix together the leftover oyster sauce, sesame oil, and soy sauce in a small jug. Brush the skewers with 1/4 of this flavorful sauce.
  • Spoon rice mixture onto lettuce leaves, place skewers on top, drizzle with remaining sauce, and sprinkle with water chestnuts, coriander, and chili before serving.
