Ingredients:
  • 150g self-raising flour
  • 10.00 gm cornflour
  • 180g caster sugar
  • 60ml milk
  • 125g butter, softened
  • 2 eggs
  • 60g butter, softened
  • 2 lemons, rind finely grated
  • 300.00 gm icing sugar, sifted
  • 42.00 gm fresh lemon juice
Instructions:
  • Preheat oven to 190°C while lining a greased 9cm x 21cm loaf pan with non-stick baking paper.
  • Combine all ingredients in a large bowl and beat with electric beaters for 6 minutes until light and fluffy. Transfer the mixture evenly into the loaf pan and bake for 35-40 minutes or until a skewer inserted into the center comes out clean. Let it rest for 5 minutes before gently flipping onto a wire rack to cool.
  • For the icing, combine the butter and lemon rind in a small bowl. Beat with a wooden spoon until smooth. Gradually mix in the icing sugar and lemon juice until well blended. Spread over the chilled cake.
