Saskatoon berries and cranberries create a scrumptious loaf cake perfect for tea or dessert.
Ingredients:
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup cream cheese, softened
  • 1 cup cranberries, halved
  • 0.5 cup saskatoon berries
  • 2 eggs, beaten
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x5-inch loaf pan.
  • Combine flour, baking powder, and baking soda, whisking them together in a small bowl.
  • Cream together sugar and cream cheese until smooth. Gently fold in cranberries, saskatoon berries, and eggs until fully incorporated. Gradually mix in flour until a silky batter forms. Pour batter into prepared pan and smooth the top with a spatula.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 1 hour and 15 minutes. Let it cool in the pan for 10 minutes, then run a knife around the edges, invert onto a serving plate, and cool completely before slicing.
