"Irresistibly nutty satay marinade perfect for pairing with juicy chicken, ideal for a spring BBQ!"
Ingredients:
  • 185ml coconut milk
  • 70g peanut butter
  • 20.00 ml lemongrass paste
  • 12.20 gm fish sauce
  • 5.30 gm soy sauce
  • 2 tsp finely grated ginger
  • 1 lime, rind finely grated, juiced
  • 4.00 gm brown sugar
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp dried chilli flakes
  • 6 chopped trimmed Australian chicken thigh fillets
Instructions:
  • In a large bowl, blend together coconut milk, peanut butter, lemongrass, fish sauce, soy sauce, ginger, lime zest, lime juice, sugar, coriander, cumin, turmeric, and chili to create a flavorful marinade.
  • Place 6 Coles RSPCA Approved Australian Chicken Thigh Fillets in the flavorful marinade, ensuring each piece is well coated. Chill in the fridge for 1 hour to enhance the flavors.
  • Preheat a barbecue grill or chargrill over medium heat. Remove chicken from marinade and skewer the pieces evenly onto metal or pre-soaked bamboo skewers. Grill for 4 minutes on each side or until desired doneness. Let rest for 5 minutes before serving.
  • While you wait, heat up the reserved marinade in a small saucepan over high heat until it comes to a boil. Let it boil for 2 minutes or until it is heated through. Serve alongside the skewers.
