Ingredients:
  • 4 (about 250g each) Trim Lamb mini roasts
  • 200mls Spicy Satay Sauce
  • 75g (1/2 cup) crushed roasted peanuts, to serve
  • 62.50 ml coarsely chopped fresh coriander, to serve
Instructions:
  • Cube lamb and mix with Holbrooks Satay Sauce in a glass or ceramic bowl. Refrigerate, covered, for 1 hour to marinate. Soak 16 large bamboo skewers in water. Remove and preheat grill to medium.
  • Skewer the lamb cubes and grill for 3 minutes per side until perfectly cooked. Let them cool. Place the lamb skewers in an airtight container and sprinkle with peanuts and coriander, ready to bring along for the picnic.
