Ingredients:
  • 1 large brown onion, finely chopped
  • 1kg beef sausage mince
  • 375.00 ml fresh white breadcrumbs
  • 187.50 ml pie apple (see Notes)
  • 2 eggs, lightly beaten
  • 46.80 gm Dijon mustard
  • 1 Granny Smith apple
  • 20.00 ml malt vinegar
  • 16.00 gm brown sugar
Instructions:
  • 1. Preheat your oven to 200°C. 2. Grease and line a 7cm deep, 10cm x 20cm loaf pan with baking paper. 3. Heat oil in a frying pan over medium heat, then add onion and cook for 3 to 4 minutes until soft. Allow to cool.
  • Combine onion, mince, breadcrumbs, pie apple, eggs, mustard, salt, and pepper in a large bowl. Mix thoroughly with your hands until fully combined. Transfer mixture to a loaf pan and gently press down to create an even surface.
  • Quarter the apple, remove the core, and thinly slice it. Arrange two layers of apple slices lengthwise on top of the meatloaf, slightly overlapping.
  • Prepare the topping by mixing together all ingredients in a bowl. Brush the mixture over the apples. Bake for 1 hour or until a skewer comes out clean when inserted in the center. Let it sit in the pan for 5 minutes before slicing and serving.
