Ingredients:
  • 36.40 gm olive oil
  • 500g chicken sausages
  • 1 red onion, halved, sliced
  • 300.00 gm Basmati rice
  • 510.00 gm chicken style liquid stock
  • 400g can diced tomatoes with oregano and basil
  • 300g broccoli, cut into small florets
  • 50g chargrilled red capsicum, sliced
Instructions:
  • In a large frying pan over medium heat, heat 1 tablespoon of oil. Cook the sausages, turning occasionally, for 8 to 10 minutes until fully cooked. Drain on paper towel and slice thickly on a diagonal.
  • In a large saucepan over medium heat, warm the remaining oil. Add onion and garlic and cook, stirring occasionally, for 3 to 4 minutes until onion is tender. Add rice and stir to coat. Pour in the stock and tomatoes, then increase heat to high and bring to a boil.
  • Lower the heat and simmer covered for 15 minutes until the rice is tender. Introduce broccoli, bell peppers, and sausages. Stir occasionally and cook for 5 minutes until the broccoli is tender. Season with pepper before serving.
