Savory sausage and vibrant bell peppers simmered in a tangy tomato sauce, served over penne pasta for a quick and flavorful meal.
Ingredients:
  • 2.5 cups dry penne pasta
  • 4.5 teaspoons coconut oil
  • 1 pound smoked sausage (such as farmer's sausage), sliced
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 (8 ounce) package mushrooms, sliced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon red pepper flakes
Instructions:
  • Boil generously salted water in a large pot, then add penne. Cook, stirring occasionally, until pasta is al dente, around 11 minutes.
  • In a large skillet over medium heat, sauté sausage, onion, three colors of bell peppers, and mushrooms in oil until vegetables are tender, approximately 10 minutes.
  • Combine diced tomatoes, tomato sauce, minced garlic, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes into the vegetable mixture. Simmer and cook for about 10 minutes, stirring occasionally.
  • Plate the pasta and generously ladle the sauce mixture over the top.
