Indulge in a comforting sausage and potato casserole paired with savory garlic bread.
Ingredients:
  • 500g brushed potatoes, peeled, cut into 2cm pieces
  • 27.30 gm olive oil
  • 8 (560g pkt) Classic Pork Sausages
  • 1 brown onion, coarsely chopped
  • 1 long red chilli, seeded, finely chopped (optional)
  • 400g can Diced Tomatoes
  • 120g pea
  • 1/2 x 450g pkt (1 loaf) Smart Buy Garlic Bread Twin Pack
Instructions:
  • Boil the potato in a saucepan of water for 10 minutes or until tender. Drain thoroughly before returning it to the pan.
  • Heat 2 teaspoons of oil in a frying pan over medium heat. Brown the sausages for 4-5 minutes, then transfer them to a plate to cool. Cut into 3cm pieces.
  • Heat the rest of the oil in the frying pan. Sauté the onion until it starts to change color, around 2-3 mins. Add the optional chilli and cook until fragrant, about 1 min. Add tomato, potato, and sausage. Pour a can of water into the pan. Stir well and bring to a boil.
  • Lower the heat and gently simmer for 6-8 minutes until the sausage is fully cooked. Stir in the peas and cook for an additional minute until heated through.
  • Bake the garlic bread according to package instructions while the casserole is cooking. Serve alongside the casserole.
