Elevate regular sausages into a delectable sausage bake that will soon be a weeknight staple.
Ingredients:
  • 600g small potatoes (such as Nicola or chat), quartered
  • 2 garlic cloves, crushed
  • 60ml olive oil
  • 40.00 ml chopped rosemary
  • 12 small beef sausages
  • 350g vine-ripened cherry tomatoes
  • 120g rocket
  • 3 garlic cloves
  • 100g parmesan
  • 125ml olive oil
Instructions:
  • Preheat the oven to 190°C. Combine the potatoes, garlic, olive oil, and rosemary in a large baking dish. Season with salt and pepper, and mix well to coat. Bake for 20 minutes.
  • Prepare the pesto by pulsing rocket and garlic in a food processor until coarsely chopped. Add parmesan, oil, salt, and pepper, then blend until creamy. Transfer the mixture to a serving bowl.
  • Take the dish out of the oven, prick the sausages with a skewer, drizzle with oil, return to the oven, bake for 20 minutes. Add tomatoes, season with salt and pepper, bake for an additional 5 minutes until tomatoes begin to wilt.
  • Accompany with pesto, fresh green salad, and crusty bread.
