Classic sausage gravy with a rich, tangy sauce perfect for pairing with warm, flaky biscuits.
Ingredients:
  • 1 pound ground pork sausage
  • 3 tablespoons all-purpose flour
  • 3 cups milk
Instructions:
  • Preheat a large, deep skillet over medium-high heat. Cook and stir sausage until crumbly and browned, for about 5 to 7 minutes. Remove the sausage with a slotted spoon to a paper towel-lined plate to drain, and set aside.
  • Drain most of the grease from the skillet, keeping 2 to 3 tablespoons. Mix in flour over medium-low heat, whisking vigorously until a roux forms and scraping the bottom of the skillet. Turn heat to low and cook the roux for at least 5 minutes, stirring occasionally, for extra flavor like Grandma used to do.
  • Gradually pour warm milk into the thickened roux while whisking continuously. Once about 2 1/2 cups are added, raise the heat to medium and keep whisking. Bring the gravy to a gentle boil until it reaches your preferred thickness. Feel free to stir in some sausage for extra flavor if desired.
