Prepare and freeze sausage pasta pots for a quick and delicious meal anytime.
Ingredients:
  • 600g packet fresh ricotta and spinach agnolotti pasta
  • Olive oil cooking spray
  • 8 beef chipolata sausages
  • 280g jar chargrilled antipasto vegetables, drained
  • 550.00 gm tomato pasta sauce
  • 125.00 ml grated reduced-fat pizza cheese
  • Salad leaves, to serve
Instructions:
  • Boil pasta in salted water according to package instructions, then drain.
  • Spray oil in a large frying pan over medium-high heat. Cook sausages, turning occasionally, for 4 to 5 minutes until they are browned and cooked through. Then transfer to a cutting board and slice diagonally.
  • Sauté onions in a pan until softened, about 3 to 4 minutes. Add chargrilled vegetables, pasta sauce, and sausages. Bring to a boil, then reduce heat and simmer for 2 minutes until heated through. Stir in fresh basil and cooked pasta.
  • Preheat the grill to high heat. Divide the pasta mixture into four 1 1/2 cup-capacity ovenproof dishes. Top with cheese and grill for 2 to 3 minutes until cheese is golden and melted. Serve with fresh salad leaves.
