Sausage pasta salad

Try this quick and budget-friendly pasta salad for a satisfying dinner option.
Ingredients:
  • 250g dried wholemeal penne pasta
  • 100g green beans, trimmed, cut into 4cm lengths
  • 8 lean beef chipolata sausages
  • 100g button mushrooms, thinly sliced
  • 1 small red capsicum, finely chopped
  • 210g can no added salt corn kernels, drained, rinsed
  • 125g cherry tomatoes, halved
  • 50g baby spinach
  • 9.20 gm olive oil
  • 21.00 gm lemon juice
Instructions:
  • In a large saucepan of boiling salted water, cook the pasta according to package directions until tender. Add beans for the final 2 minutes of cooking. Drain, rinse under cold water, and return to the pan.
  • Heat a non-stick frying pan over medium-high heat. Add sausages and cook for 6 to 8 minutes, turning occasionally, until fully cooked. Transfer to a plate lined with paper towel and slice diagonally into thick pieces.
  • Sauté mushroom and capsicum in a pan until capsicum is tender. Mix with sausage, corn, tomato, spinach, oil, and lemon juice in pasta. Season with salt and pepper. Toss everything together and serve.
