A delectable family-sized sausage roll inspired pastry.
Ingredients:
  • 700g beef sausages
  • 18.20 gm olive oil
  • 2 garlic cloves, chopped
  • 22.20 gm tomato paste
  • 260g passata
  • 20.00 ml chopped flat-leaf parsley
  • 375g block frozen puff pastry, thawed
  • Plain flour, to dust
  • 1 egg, beaten
  • Chilli sauce, to serve
Instructions:
  • Remove sausage meat from casings and discard. Heat oil in a saucepan over medium-low heat, add onion and garlic, and cook for 5 minutes until onion softens. Increase heat to high, add sausage meat, and cook until it starts to brown. Stir in tomato paste, passata, and water, then cook for another 5 minutes. Let cool.
  • Combine the mixture with parsley in a food processor and pulse until just mixed. Season to taste. Preheat the oven to 180°C and line a baking tray with baking paper. Cut the pastry in half lengthwise and roll out one half on a lightly floured board to an 18cm x 35cm rectangle. Place it on the tray and spread the sausage mixture on top, leaving a 2cm border. Brush the border with water. Roll out the remaining pastry on a lightly floured board to a size slightly larger than the first rectangle.
  • Create small diagonal cuts in the center of the pastry. Cover the sausage meat and press the edges to seal. Brush the pastry with beaten egg and bake for 25 minutes until golden and puffed. Enjoy with the quick chili sauce.
