Sausage-Mushroom Pasta Calzones

Easy and delectable calzone-inspired egg rolls!
Ingredients:
  • 1/2 pound bulk pork sausage
  • 1 small onion, chopped (1/4 cup)
  • 1 cup spaghetti sauce
  • 6 square egg roll wrappers (about 6 1/2 inches square)
  • 1/2 cup sliced mushrooms
  • 1 cup shredded mozzarella cheese (4 ounces)
  • 1/4 cup crumbled Gorgonzola cheese, if desired
Instructions:
  • Preheat your oven to 400°F. Grease a 13x9x2-inch rectangular baking dish. In a 10-inch skillet over medium-high heat, cook sausage and onion until sausage is no longer pink; drain. Add spaghetti sauce and cook until hot.
  • Spread a generous amount of the sausage mixture on half of each egg roll wrapper, leaving a small border around the edge. Add the mushrooms, 1/2 cup of mozzarella cheese, and Gorgonzola cheese on top. Dampen the edges lightly with water, then fold over the filling and press the edges to seal. Transfer to a baking dish.
  • Sprinkle the rest of the mozzarella cheese on top and bake uncovered for 15 to 20 minutes until the calzones are heated through and the cheese starts to turn golden brown. Serve with extra spaghetti sauce on the side if desired.
