Hearty sausage dish perfect for winter nights, served with crusty bread to soak up the savory juices.
Ingredients:
  • 1kg thick beef sausages
  • 1 brown onion, diced
  • 2 garlic cloves, crushed
  • 1 long red chilli, finely chopped
  • 40.00 ml oregano leaves, chopped
  • 2 x 400g cans diced tomatoes
  • 400g can cannellini beans, drained, rinsed
  • toasted crusty sourdough bread, to serve
Instructions:
  • In a large saucepan over medium heat, gently cook sausages for 8 to 10 minutes, turning occasionally, until fully cooked. Place on a paper towel-lined plate and cover to maintain warmth.
  • Add the onion to the pan and cook it, stirring often, until tender, which should take about 3 to 4 minutes. Next, add the garlic, chili, and oregano, and cook while stirring for another 1 minute. Then, return the sausages to the pan, pour in the tomatoes, and cook without cover for around 5 minutes until the sauce thickens. Finally, mix in the beans and cook for an additional 5 to 6 minutes until the beans are heated through.
  • Plate the sausages and generously top them with the flavorful tomato and bean mixture. Serve alongside toasted bread slices.
