Create a quick and affordable dinner with just six simple ingredients!
Ingredients:
  • 240g tomato
  • 750g pork sausage
  • 2 medium brown onions, cut into thin wedges
  • 3 garlic cloves, crushed
  • 425g can baked beans in rich tomato sauce
Instructions:
  • Score a cross at the base of each tomato using a small knife. Transfer the tomatoes to a heatproof bowl and pour boiling water over them. Let them sit for 1 minute before draining. Peel the skins off carefully and discard them. Roughly chop the tomatoes.
  • In a large saucepan over medium-high heat, sizzle the sausages in oil until they turn a light golden brown, about 8 minutes. Transfer them to a plate. Throw in the onions and cook until they soften, about 3 to 4 minutes. Stir in the garlic and tomato, cooking until the tomato softens and collapses, about 5 minutes.
  • Add the sausages back to the pan and toss in the baked beans. Cover the pan and bring it to a boil. Lower the heat and let it simmer for 5 minutes, ensuring the sausages are fully cooked. Finish by seasoning with pepper to taste.
