Simple and delicious sausage and bean dish with only 6 ingredients - perfect for a hearty family dinner.
Ingredients:
  • 4 thick beef sausages
  • 1 large brown onion, finely chopped
  • 400g can diced tomatoes
  • 3 x 400g cans red kidney beans, drained, rinsed
  • 2.50 gm smoked paprika
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan over medium-high heat, sizzle sausages in oil until nicely browned, about 5 minutes. Remove from pan and slice into thick pieces.
  • Add the onion to the pan and cook, while stirring, for 3 minutes or until softened. Then, put the sausage back in the pan along with the tomatoes, beans, paprika, half of the parsley, and 1/3 cup of cold water. Mix well and bring it to a boil. Reduce heat, cover, and simmer for 10 minutes until heated through. Garnish with the remaining parsley and serve.
