Sautéed Celery and Leeks

Quick and easy sautéed celery and leeks side dish - a perfect pairing.
Ingredients:
  • 1 tablespoon unsalted butter
  • 2.5 cups leeks, white and light green parts only, thinly sliced
  • 0.25 teaspoon freshly ground black pepper
  • 3.5 cups sliced celery
  • 0.5 teaspoon lemon zest
  • 1 clove garlic, minced
  • chopped celery leaves for garnish (optional)
Instructions:
  • In a large skillet over medium-high heat, melt butter until sizzling. Toss in leeks and season with salt and pepper. Cook until just tender, stirring occasionally, for about 3 minutes. Introduce celery to the mix in the skillet.
  • Simmer the mixture with a lid on, stirring from time to time, until the celery is tender, approximately 5 minutes. Introduce lemon zest and garlic into the pot, and continue stirring for an additional minute. Top it off with celery leaves for an optional garnish.
