Sauteed asparagus & broccolini with wilted lettuce

Elevated salad with sauteed asparagus, broccolini, and lettuce for a unique twist.
Ingredients:
  • 2 bunches broccolini, trimmed
  • 3 bunches asparagus, trimmed, halved lengthwise
  • 3 eschalots, thinly sliced
  • 1 baby cos, outer leaves discarded, shredded
  • 1 bunch chives, finely chopped
Instructions:
  • Bring a large saucepan of salted water to a boil. Add broccolini and cook for 1 minute; then add asparagus and cook for 2 more minutes until vegetables are tender. Drain.
  • In a large frying pan over medium heat, combine oil and butter. Sauté eschalots for 4 minutes until soft. Add broccolini and asparagus, mixing well. Remove from heat, then stir in lettuce, chives, salt, and pepper until the lettuce wilts from the heat of the vegetables.
