Sauteed asparagus with caramelised balsamic walnuts

Grilled asparagus topped with sweet balsamic walnuts is a BBQ must-have.
Ingredients:
  • 20g butter, chopped
  • 2 bunches asparagus, trimmed, halved lengthways
  • 28.75 gm walnuts
  • 40.00 ml balsamic vinegar
  • 12.00 gm brown sugar
  • 60g baby rocket
  • 62.50 ml shaved parmesan
  • Zest of 1 lemon, to serve
Instructions:
  • In a large frying pan over medium-high heat, melt butter. Add asparagus and garlic, toss and cook for 2 to 3 minutes until asparagus is tender and garlic is golden. Season with salt and pepper, then transfer to a plate and cover with foil to keep warm.
  • Combine walnuts, vinegar, sugar, and 1 tablespoon of water in a pan. Cook and stir for 1 to 2 minutes until the sugar caramelizes and coats the walnuts. Roughly chop the mixture.
  • Place fresh rocket and asparagus on a platter. Sprinkle over the flavorful walnut mixture, grated parmesan, and a hint of refreshing lemon zest. Present and enjoy.
