Sauteed cabbage with caraway

Ingredients:
  • 40g (2 tbsp) dairy-free margarine
  • 18.40 gm vegetable oil
  • 1 large brown onion, halved, thinly sliced
  • 20.00 ml caraway seeds
  • 1 small red cabbage, outer leaves removed, halved, core removed, shredded
  • 80ml (1/3 cup) white wine vinegar
  • 60ml (1/4 cup) chicken broth
  • Salt & ground black pepper, to taste
  • Extra caraway seeds, to serve
Instructions:
  • In a large saucepan over medium heat, melt the margarine with oil. Add onion and caraway seeds, cook uncovered, stirring frequently, until onion slightly softens, about 5 minutes.
  • Combine the cabbage, vinegar, and broth in a pot. Cook covered, stirring occasionally, for 20-25 minutes until the cabbage is soft. Season with salt and pepper, then transfer to a serving bowl and sprinkle with caraway seeds.
