Savory Buttermilk Meatloaf

Savory buttermilk meatloaf with a delicious Dijon mustard and brown sugar glaze.
Ingredients:
  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 2.5 pounds ground chuck
  • 1 cup dry bread crumbs
  • 0.75 cup buttermilk
  • 0.5 cup ketchup
  • 2 large eggs, beaten
  • 1 tablespoon Worcestershire sauce
  • 2.5 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon hot sauce
  • 0.5 teaspoon dried tarragon
  • 0.5 teaspoon Italian seasoning
  • 0.25 cup brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cider vinegar
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with a silicone mat.
  • In a skillet over medium-high heat, melt butter. Sauté onion until soft and translucent, about 6 to 7 minutes. Allow to cool to room temperature, approximately 5 minutes.
  • In a bowl, mix cooled onion, ground chuck, bread crumbs, buttermilk, ketchup, eggs, Worcestershire sauce, salt, pepper, hot sauce, tarragon, and Italian seasoning with a fork. Let it sit for about 10 minutes until the bread crumbs absorb the moisture.
  • Transfer the meatloaf mixture to the center of the prepared baking sheet and shape it into a 9x5-inch loaf.
  • Place in the oven and bake for 45 minutes until golden brown.
  • Prepare the glaze for the meatloaf by combining brown sugar, mustard, and vinegar in a small bowl and whisking them together.
  • After 45 minutes, take the meatloaf out of the oven and generously coat it with a delicious brown sugar glaze. Put it back in the oven and bake until fully cooked through, approximately 30 more minutes. Use an instant-read thermometer to ensure the center reaches at least 160 degrees F (70 degrees C).
