Quick and delicious savory scones, great for any occasion! Ready in just 35 minutes.
Ingredients:
  • 2 1/2 cups all-purpose flour
  • 1/2 cup shredded Cheddar cheese (2 ounces)
  • 3 medium green onions, chopped (3 tablespoons)
  • 3 tablespoons chopped fresh cilantro or parsley
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/4 cup butter or margarine
  • 1/2 cup apple juice
  • 1/3 cup plain fat-free yogurt
  • 2 tablespoons plain fat-free yogurt
Instructions:
  • Preheat oven to 400°F. Grease 2 cookie sheets with cooking spray. In a large bowl, combine flour, cheese, onions, cilantro, baking powder, baking soda, salt, and red pepper. Cut in butter using a pastry blender or 2 knives until the mixture resembles fine crumbs. Stir in apple juice, 1/3 cup yogurt, and egg until the dough comes together.
  • On a lightly floured surface, knead the dough for about 1 minute until smooth. Divide the dough in half and roll each half into a 9-inch circle that is 1/4 inch thick. Place the circles on a cookie sheet. Cut each circle into 12 wedges with a floured knife without separating them. Brush 1 tablespoon of yogurt over each circle.
  • Bake for 15 to 17 minutes until golden brown. Gently separate wedges and transfer them from the cookie sheets to a wire rack. Serve while warm.
