Nutritious wholegrain French toast for a satisfying breakfast with a balance of fats and protein, ideal for a savory start to your day.
Ingredients:
  • 125g cherry truss tomatoes
  • 41.20 gm milk
  • 4 slices wholemeal sourdough bread
  • 1/2 small avocado, sliced
  • 62.50 ml fresh basil leaves
Instructions:
  • Preheat your oven to 180°C/160°C fan forced. Line a baking tray with baking paper, then roast tomatoes for 10 minutes until they are slightly wilted.
  • Combine the eggs and milk in a spacious shallow bowl, whisking until smooth.
  • 1. Spray a large non-stick frying pan with oil and heat over medium heat. Dip bread slices in egg mixture until well soaked, then cook for 2 minutes on each side until golden brown and egg is set. Repeat with remaining bread and egg mixture.
  • Top your French toast with a delightful combination of fresh tomatoes, creamy avocado, and fragrant basil.
