Healthier twist on classic French toast with whole grains, good fats, and protein. Ideal for a savory breakfast alternative.
Ingredients:
  • 125g cherry truss tomatoes
  • 41.20 gm milk
  • 4 slices wholemeal sourdough bread
  • 1/2 small avocado, sliced
  • 62.50 ml fresh basil leaves
Instructions:
  • Preheat the oven to 180°C/160°C fan forced. Line a baking tray with baking paper, then roast the tomatoes for 10 minutes until slightly wilted.
  • In a wide bowl, vigorously mix the eggs and milk until well combined.
  • Prepare a spacious non-stick frying pan by lightly spraying it with oil and heating it over medium heat. Take each bread slice and dip it in the egg mixture until thoroughly soaked. Cook each side for 2 minutes until golden brown and the egg is fully set. Continue with the rest of the bread slices and egg mixture.
  • Top French toast with a vibrant mix of tomatoes, avocado, and fresh basil before serving.
