Succulent scallops paired with peppery arugula, hearty lentils, and creamy butter beans - a flavorful spring treat.
Ingredients:
  • 1 pound scallops
  • 2 tablespoons olive oil
  • 1 teaspoon sweet paprika
  • 1 pinch cayenne pepper
  • salt and freshly ground black pepper to taste
  • 1 clove garlic, crushed
  • 1 (12 ounce) bottle butter beans, rinsed and drained
  • 1 lemon, juiced
  • 0.5 teaspoon Italian seasoning
  • 1.5 cups cooked lentils
  • 1 cup arugula, or to taste
Instructions:
  • Combine scallops with a vibrant mix of olive oil, paprika, cayenne pepper, salt, and black pepper in a bowl until they are thoroughly coated.
  • Preheat a nonstick skillet over high heat. Sear scallops until golden brown on each side for about 3 minutes. Lower the heat to medium and transfer the seared scallops to a bowl.
  • Cook garlic in the skillet until fragrant, for about 30 seconds. Add butter beans, lemon juice, and Italian seasoning; cook until beans are slightly golden, for 1 to 2 minutes. Stir in cooked lentils and arugula; cook until arugula starts to wilt, for about 30 seconds.
  • Drizzle any leftover scallop juices from the bowl on top of the arugula. Mix the scallops into the lentil mixture and heat for about 1 minute. Season with salt and black pepper to taste.
