Elevate scallops with flavorful Japanese dressing for a memorable starter.
Ingredients:
  • 21.00 gm light soy sauce
  • 2 tsp rice vinegar
  • 2 tsp mirin
  • 1/2 tsp sesame oil
  • 2 qukes, seeded, cut into matchsticks
  • 1 green onion, trimmed, cut into matchsticks
  • 20.00 ml pickled ginger, thinly sliced
  • 4.60 gm peanut oil
  • 24 scallops, with shell
Instructions:
  • Combine soy sauce, vinegar, mirin, and sesame oil in a small bowl for a flavorful dressing.
  • Combine the qukes, green onion, and ginger in a small bowl and set aside.
  • In a medium frying pan over high heat, heat the peanut oil. Cook half of the scallops for 30 seconds to 1 minute on each side until they are golden and cooked to your liking. Transfer to a plate and repeat with the remaining scallops.
  • Arrange the scallops on the shells, then transfer to a serving platter. Spoon a bit of the cucumber mixture on each scallop and finish with a drizzle of the dressing.
