Irresistible peanut butter cookies, reminiscent of school cafeteria days. Perfect for large batches in a commercial mixer. Make ahead and bake fresh daily for ultimate freshness.
Ingredients:
  • 10 pounds shortening
  • 10 pounds white sugar
  • 8 pounds brown sugar
  • 40 eggs
  • 10 pounds peanut butter
  • 14 pounds all-purpose flour
  • 0.75 cup baking soda
  • 5 teaspoons salt
Instructions:
  • Preheat the convection oven to 325 degrees F (165 degrees C) or refer to the note for a traditional oven. Line baking sheets with parchment paper.
  • In a large bowl, beat shortening, white sugar, and brown sugar until smooth. Stir in peanut butter until well combined. Scrape down the sides of the bowl as needed. Add eggs in batches of 5 or 6, mixing well after each addition. Scrape down the bowl, and mix for 1 minute. Gradually add flour, baking soda, and salt, mixing until fully incorporated. Scrape down the bowl one last time to ensure even mixing.
  • Use an ice cream scoop to portion dough or roll into 2-inch balls. Arrange cookies 3 inches apart on baking sheets. Gently press down with a fork to create a criss-cross pattern.
  • Bake in the preheated oven for 7 minutes until the edges are lightly toasted. Let the cookies cool on the baking sheet for at least 5 minutes to prevent crumbling.
