Delicious breakfast croissants filled with scrambled eggs, ham, avocado, and tomato relish.
Ingredients:
  • 4 croissants
  • 6 eggs
  • 84.98 gm milk
  • 40.00 ml finely chopped fresh chives
  • 20.00 ml fresh thyme leaves
  • 20g butter
  • 125.00 ml tomato relish
  • 1 avocado, thinly sliced
  • 150g shaved ham
Instructions:
  • Preheat oven to 180C/160C fan-forced. Arrange croissants on a baking tray and bake for 5 to 7 minutes until warm and lightly crisp.
  • In a spacious bowl, vigorously whisk together eggs, milk, chives, thyme, salt, and pepper until well combined.
  • Heat butter in a large non-stick pan until sizzling. Pour in the eggs, gently stirring with a wooden spoon for 2 minutes until just set. Remove from heat.
  • Slice the croissants in half lengthwise, then lavish them with relish. Finish by layering on avocado, ham, and scrambled eggs. Enjoy your mouthwatering creation.
