Ingredients:
  • 1 tablespoon butter, or more to taste
  • 4 eggs
  • 1 cup diced puffball mushrooms
  • 0.5 cup diced green onions
Instructions:
  • Heat a skillet over medium heat and melt the butter.
  • Crack eggs into a bowl, mix in mushrooms, and whisk vigorously. Set aside 2 tablespoons of green onions.
  • Add eggs to the sizzling butter in the pan and gently scramble until soft and fluffy. Mix in the rest of the green onions, salt, and pepper while scrambling for 3 to 5 minutes or until cooked to your liking, making sure not to overdo it. Sprinkle with the saved green onions for a finishing touch.
