Elegant, velvety beige confection with a subtle yet rich taste.
Ingredients:
  • 1.75 cups packed light brown sugar
  • 0.75 cup white sugar
  • 0.5 cup hot water
  • 0.25 cup light corn syrup
  • 2 egg whites
  • 1 teaspoon pecan flavored extract
  • 0.25 cup chopped pecans
Instructions:
  • In a heavy 2-quart saucepan, mix light brown sugar, white sugar, water, corn syrup, and salt. Cover and cook until mixture boils vigorously. Uncover, insert a candy thermometer, and cook without stirring until it reaches 260 degrees F (127 degrees C). Remove from heat.
  • Whip egg whites to stiff peaks. Gradually pour hot syrup into the egg whites while beating on high speed with an electric mixer. Stir in vanilla and pecan flavoring.
  • Beat until soft peaks form and the candy loses its gloss. Gently fold in the pecans and spoon onto waxed paper. Once set, store in an airtight container.
