Indulge in a delectable seafood marinara pasta with a rich medley of shellfish, garlic, white wine, and zesty lemon for exquisite flavor.
Ingredients:
  • 1 (16 ounce) package linguine pasta
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 small red onion, minced
  • 3 green onions, chopped
  • 2 tomatoes, seeded and diced
  • 1 (8 ounce) can crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon ground thyme
  • 2 pounds mussels, cleaned and debearded
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 cup dry white wine
  • 2 teaspoons lemon juice
  • 1 lemon - cut into wedges, for garnish
Instructions:
  • Assemble all the ingredients needed for the recipe.
  • Bring a pot of salted water to a lively boil. Cook linguine until al dente, about 11 minutes. Drain thoroughly in a colander over the sink.
  • In a skillet over medium heat, sauté garlic and onion in 1 tablespoon of olive oil until the onion is soft and translucent, about 5 minutes.
  • Heat the remaining olive oil in a large skillet over gentle heat. Add the green onion and diced tomatoes, stirring until the tomatoes are soft. Combine the onion mixture with the tomatoes, then mix in crushed tomatoes, tomato paste, oregano, and thyme. Let it all simmer for 5 minutes.
  • Add the mussels and shrimp into the pot, followed by the wine and lemon juice. Increase heat and cover. Keep cooking until the shrimp turn pink and the mussels open. Remove any unopened mussels. Serve the delectable seafood over pasta and top with lemon wedges for a refreshing touch.
