Impressively flavorful vegetarian stir-fry featuring seitan.
Ingredients:
  • 40.00 ml Shaoxing wine
  • 21.00 gm light soy sauce
  • 5.00 gm cornflour
  • 60ml (1/4 cup) peanut oil
  • 250g seitan, sliced (see notes)
  • 2 tsp finely grated fresh ginger
  • 2 garlic cloves, finely chopped
  • 1/2 tsp chilli paste
  • 200g broccoli, cut into florets
  • Sesame oil, to drizzle
  • Sliced green onions, to sprinkle
  • Steamed rice, to serve
Instructions:
  • In a small jug, mix the Shaoxing, soy sauce, caster sugar, cornflour, and 1 tablespoon of water. Set aside.
  • In a sizzling hot wok, fry the seiten in batches in peanut oil for 2 minutes per batch until crispy. Plate and serve.
  • Leave just a tablespoon of oil in the wok. Toss in ginger, garlic, and chili paste and stir fry until fragrant, about 30 seconds. Add broccoli and 2 tablespoons of water. Stir-fry for 3 minutes until broccoli is crisp and water evaporates.
  • Stir in the soy sauce mixture and seitan, stir-fry until the sauce thickens (about 1 minute). Finish with a drizzle of sesame oil and a sprinkle of green onions. Serve hot with rice.
